​Health Happy Breakfast Tips and Recipes to Start Your Day

Spring is in the air and what better way to start a new season than by changing up your breakfast routine!  The morning can be very busy and we rarely have time to make a gourmet breakfast, but that doesn’t mean we need to go without. There are many simple breakfast ideas that take a small amount of planning that are healthy and taste great. They say breakfast is the most important meal of the day so let’s strive to make it the quickest and tastiest!

Banana Peanut Butter Toast

Take your toast to the next level! Add some fruit to a classic; the banana adds extra vitamins, energy and fiber. Try whole wheat bread for extra fiber which helps us feel fuller longer!

Berry Smoothie

Here’s a simple and delicious smoothie for the morning rush. Blend frozen fruit (banana and your favorite berries work great) with Greek yogurt and milk. You can combine the ingredients in a container and freeze it overnight to quickly blend up in the morning. 

Health Happy Tip: Avoid adding juices to smoothies as they can increase the sugar content of your breakfast. Fruit has natural sugar in it to make your smoothie taste great!

Egg Breakfast Muffins 

These little egg muffins are easy to prepare and can be made ahead of time to last all week. They’re full of protein and you can mix and match the fillings to make your favorite flavor combination. 

Recipe: makes 10 egg muffins 

  1. Preheat oven to 350 F
  2. Whisk 10 eggs (or one egg per muffin) with toppings of your choice like: 
    1. Frozen or fresh spinach
    2. Chopped bell peppers
    3. Shredded cheese
    4. Low sodium bacon
  3. Add as many toppings as you would like!
  4. Pour mixture into a greased muffin tin; be sure to fill the cups ¾ full
  5. Bake for 20-25 mins or until a toothpick comes out clean

Overnight Oats

Need a grab and go breakfast? Overnight oats can be made the night before to be ready for the morning! Combine oats, frozen blueberries, Greek yogurt and milk into a sealed container or jar. You can add almonds or half a banana to it in the morning for some extra protein and flavour!

Egg Wraps

This is another make-ahead breakfast for when you’re running out the door. These wraps can be prepared any time and stored in the freezer. For each wrap, take a whole wheat tortilla and fill it with: 

  1. Scrambled eggs
  2. Shredded cheese
  3. Mashed black beans
  4. Chopped bell peppers

Wrap each wrap in parchment paper or aluminum foil and store in the freezer up to one month. This is another recipe where you can change the ingredients to meet your taste.  Try it with eggs, spinach, tomatoes and red onions instead!

Breakfast Cookies

Cookies for breakfast? Yes! These cookies are low in sugar, high in fiber and have lots of energy to start your day! 

Recipe for 8 cookies: 

  1. Preheat oven to 350 F
  2. Combine:
    1. 1 cup of oats
    2. 1 Tbsp cinnamon
    3. 2 mashed bananas
    4. ½ cup of coconut flakes or almonds or chopped apple.
  3. Portion spoonfuls onto a baking sheet and bake for 12 mins.
