Main Course: Mushroom Bowtie Pasta

Ingredients

  • 1 package (About 400 grams) bowtie pasta or any other type of pasta
  • 2 tablespoons non-hydrogenated margarine
  • 2 medium or 1 large onion, sliced
  • 1 - 2 packages (About 200 grams each) mushrooms, sliced (use 2 packages for a meatier flavour)
  • 2 cloves fresh garlic, minced or 1 teaspoon garlic powder
  • 2 ½ cups chicken broth or 3 cups water + 2 teaspoons instant chicken bouillon powder
  • 2 tablespoons flour
  • ½ teaspoon dried herbs like thyme, sage, parsley (add more to taste)
  • 1 ½ cups feta cheese, crumbled or any other type of shredded cheese

Directions for Preparation

  1. Cook pasta according to package directions and drain.
  2. In a large pot, heat the margarine and onions on medium high. Cook until soft, about 10 minutes.
  3. Add the mushrooms, garlic and seasonings. Cook for a few minutes, just until the mushrooms start to brown.
  4. Slowly add the broth or water and flour stirring continually to avoid lumps.
  5. Cook for about 2 minutes or until the sauce thickens.
  6. Add pasta to the sauce and toss to coat.
  7. Remove from heat and gently stir in the cheese. Let sit with the lid on the pot for a few minutes before serving.
